Some occasions require very special confectionary and your wedding cake is probably the most important of them. Rick and Honoria Gilchrist run Cake Occasions, a business specialising in wedding cakes.

Rick has experience working in the culinary industry for over 20 years. He is a graduate of the Silwood Kitchen Cordon Bleu School in Capetown, South Africa. He worked for several years in the UK where he met his wife, Honoria. They returned to Ireland last year. Honoria, who trained in Cathal Brugha Street College of Catering is also part of the Cake Occasions’ team. “We work well together. We make a good team, combining Irish and International creative designs,” Gilchrist says.

They have some tips to put the perfect icing on your cake.

-Irish traditional flavours: fruit cake and sponge can’t go wrong. For Gilchrist, wedding cakes trends in Ireland are very clear. Fruit cake and sponge are the most requested by Irish couples. “Ireland is very traditional. People want classic design and flavours for their wedding cakes. Usually fruit cake mixed with sponge in the top tiers,” he says.

-Research: “Look at as many designs as you can before you choose your wedding cake.” Magazines, shops, wedding fairs, Internet, TV†¦

-Creative designs: “Blend a number of designs together and design you own cake.”

-Personal: Making your own design is more personal. “It doesn’t mean you have to bake your own cake. You can have the idea and leave the rest to professionals,” says Gilchrist. “Cake Occasions enable you to be creative.”

-Time: book in advance. “Three months or sooner.”

“Cakes can be made to order with many themes to choose from,” says Honoria. Cake Occasions’ speciality is to recreate the bridal bouquet and colour-coordinate the decorations on the cake in hand crafted sugar flowers.
