Congratulations, similar story, 9 years together and finally getting hitched in July, 2009. Regarding New Year's Eve ceremony, I know someone who is getting married on that day in North Cork, also the hotel I am using for my wedding suggested that date at no extra cost, so it is possible. Alot of planning to do in a short time, good luck with it.
